Ingredients of Foxtail Millet Pulao
- 1 cup foxtail millet
- 1 onion, sliced
- 1 tomato, chopped
- 1 cup mixed vegetables (carrots, peas, beans)
- 2 green chillies, slit
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 bay leaf
- 2-3 cloves
- 1 cinnamon stick
- 2 cardamom pods
- 2 cups water
- Salt to taste
- 2 tbsp oil
How to Make Foxtail Millet Pulao
- Rinse the foxtail millet thoroughly in water and soak it for 30 minutes. Drain the water and keep the millet aside.
- Heat oil in a pressure cooker and add the cumin seeds, bay leaf, cloves, cinnamon stick, and cardamom pods. Sauté for a few seconds until fragrant.
- Add the sliced onions and green chillies and sauté until the onions turn translucent.
- Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and sauté until they turn mushy.
- Add the mixed vegetables and sauté for a few minutes until they are slightly cooked.
- Add the drained foxtail millet and sauté for a minute until the millet is coated with the masala.
- Add 2 cups of water and salt to taste. Mix well and pressure cook for 2 whistles.
- Once the pressure is released, open the lid and fluff the pulao with a fork.
- Serve hot with a raita or any side dish of your choice.
