Ingredients of Yaki Soba Noodles
- 8 oz. soba noodles
- 1 tbsp. vegetable oil
- 1/2 cup sliced cabbage
- 1/2 cup sliced carrots
- 1/2 cup sliced bell peppers
- 1/2 cup sliced onion
- 1 cup sliced mushrooms
- 8 oz. cooked chicken breast, sliced
- 3 tbsp. soy sauce
- 2 tbsp. oyster sauce
- 2 tbsp. sake or dry white wine
- 1 tbsp. sugar
- 2 cloves garlic, minced
- 1 tsp. grated ginger
- Salt and pepper, to taste
- Green onions, chopped, for garnish
How to Make Yaki Soba Noodles
- Cook the soba noodles according to package instructions, then drain and rinse with cold water to stop the cooking process. Set aside.
- In a small bowl, whisk together the soy sauce, oyster sauce, sake or wine, sugar, garlic, and ginger. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the sliced cabbage, carrots, bell peppers, onion, and mushrooms to the pan and stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Add the cooked chicken to the pan and stir-fry for another 2-3 minutes until heated through.
- Add the cooked soba noodles to the pan and pour the sauce over the top. Stir-fry everything together for 2-3 minutes until well-combined and heated through.
- Season with salt and pepper, to taste.
- Garnish with chopped green onions and serve hot.
