1 cup samak rice 1/4 cup split yellow moong dal (optional) 2 tablespoons ghee or oil teaspoon cumin seeds 1/2 teaspoon grated ginger 1 green chilli, finely chopped (optional) 1/4 teaspoon asafoetida (hing) 1/2 teaspoon turmeric powder Salt to taste 3 cups water

Ingredients
Rinse the Samak rice and moong dal (if using) together in a fine-mesh strainer until the water runs clear. Soak them in enough water for 30 minutes.
1Heat ghee or oil in a pressure cooker or a heavy-bottomed pan. Add cumin seeds and let them crackle.
1Add grated ginger and green chilli (if using) and saute for a few seconds.
Add asafoetida and turmeric powder and stir well.
Add 3 cups of water and salt to taste. Mix well.
Close the pressure cooker lid and cook for 3-4 whistles on medium heat. If using a pan, cover it and cook on low heat for 20-25 minutes or until the rice and dal are cooked.
Once the pressure has been released, open the lid and fluff the khichdi with a fork.
Serve hot with plain yoghurt or cucumber raita. Enjoy your delicious and healthy Samak ki khichdi
