Foxtail millet pulao is a delicious and healthy Indian rice dish made using foxtail millet

1 cup foxtail millet 1 onion, sliced 1 tomato, chopped 1 cup mixed vegetables (carrots, peas, beans) 2 green chillies, slit 1 tbsp ginger-garlic paste 1 tsp cumin seeds 1 bay leaf 2-3 cloves 1 cinnamon stick 2 cardamom pods 2 cups water Salt to taste 2 tbsp oil

Ingredients
Rinse the foxtail millet thoroughly in water and soak it for 30 minutes. Drain the water and keep the millet aside.
Heat oil in a pressure cooker and add the cumin seeds, bay leaf, cloves, cinnamon stick, and cardamom pods. Saute for a few seconds until fragrant.
Add the sliced onions and green chillies and saute until the onions turn translucent.
Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add the chopped tomatoes and sauté until they turn mushy.
Add the mixed vegetables and sauté for a few minutes until they are slightly cooked.
Add the drained foxtail millet and sauté for a minute until the millet is coated with the masala.
Add 2 cups of water and salt to taste. Mix well and pressure cook for 2 whistles.
Once the pressure is released, open the lid and fluff the pulao with a fork.
Serve hot with a raita or any side dish of your choice. Enjoy your delicious and healthy foxtail millet pulao.
