Beetroot Uttapam is a healthy and delicious South Indian breakfast dish.

1 cup semolina (rava or sooji) 1/2 cup rice flour 1/4 cup grated beetroot 1/4 cup grated carrot 1/4 cup finely chopped onion 1 green chilli, finely chopped 1/4 tsp grated ginger Salt to taste Water as required Oil for cooking

Ingredients
1In a mixing bowl, add semolina, rice flour and salt. Mix well.
Add water gradually to make a smooth batter of medium consistency. Cover and let the batter rest for 10-15 minutes.
1Add grated beetroot, grated carrot, finely chopped onion, green chilli, and grated ginger to the batter. Mix well.
1Heat a non-stick pan or a griddle on medium heat. Grease it with oil.
Pour a ladle full of the batter onto the pan and spread it evenly in a circular motion to make a thick pancake. (Note: The uttapam should be thicker than a regular dosa)
1Drizzle a little oil around the edges and on top of the uttapam.
1Cover and cook for 2-3 minutes or until the bottom is golden brown.
Flip and cook the other side for 1-2 minutes until golden brown.
Serve hot with coconut chutney or sambar. Enjoy your delicious and healthy Beetroot Uttapam
