  • 8-10 corn tortillas
  • 2 cups sliced mushrooms
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon chilli powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges

How to Make Veggie Mushroom Tacos

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onions and bell peppers and sauté until they’re softened and slightly caramelized.
  3. Add the sliced mushrooms and garlic and continue to sauté for another 5-7 minutes, or until the mushrooms are browned and tender.
  4. Add the cumin, chilli powder, paprika, salt, and pepper to the skillet and stir to combine. Cook for an additional 2-3 minutes.
  5. Warm the tortillas in the microwave or on a griddle.
  6. Assemble the tacos by placing a few spoonfuls of the mushroom and vegetable mixture onto each tortilla. Top with sliced avocado and fresh cilantro.
  7. Squeeze fresh lime juice over each taco and serve immediately.
