Ingredients of Vegetable Manchow Soup

  • 1 cup finely chopped mixed vegetables (carrots, beans, cabbage, bell peppers, etc.)
  • 1/4 cup finely chopped onions
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 2-3 green chillies, finely chopped
  • 1/4 cup cornflour
  • 2 tbsp oil
  • 4 cups vegetable broth or water
  • 2 tsp soy sauce
  • 1 tsp vinegar
  • 1 tsp chilli sauce
  • Salt and pepper to taste
  • 1/4 cup fried noodles

How to Make Vegetable Manchow Soup

  1. In a bowl, mix the cornflour with 1/2 cup water and set aside.
  2. Heat oil in a large pot or wok over medium-high heat.
  3. Add onions, garlic, ginger, and green chillies, and sauté for 1-2 minutes.
  4. Add the chopped mixed vegetables and sauté for 2-3 minutes until they are slightly tender.
  5. Add the vegetable broth or water and bring to a boil.
  6. Add soy sauce, vinegar, chilli sauce, salt, and pepper and stir well.
  7. Gradually add the cornflour mixture while stirring continuously to avoid any lumps.
  8. Bring the soup to a boil and let it simmer for 2-3 minutes until it thickens.
  9. Turn off the heat and serve hot, garnished with fried noodles.
