Ingredients of UP-Style Lapsi

  • Broken wheat (dalia): 1 cup
  • Ghee: 1/4 cup
  • Sugar: 1/2 cup (adjust to taste)
  • Water: 2 cups
  • Cardamom powder: 1/4 tsp
  • Chopped nuts (almonds, cashews, raisins): 1/4 cup

How to Make UP-Style Lapsi

  1. Heat ghee in a heavy-bottomed pan and add broken wheat. Roast the wheat on medium heat until it turns golden brown and releases a nutty aroma.
  2. Add the chopped nuts and roast for a few more minutes until they turn golden brown.
  3. Add water to the pan and stir well. Cover the pan with a lid and cook the wheat on low heat for about 15-20 minutes or until the wheat is cooked and the water has been absorbed.
  4. Add sugar and cardamom powder to the pan and mix well. Cook for a few more minutes until the sugar has dissolved and the mixture has thickened.
  5. Serve hot or cold, garnished with more chopped nuts.
