Ingredients of Garlic and Egg Fried Rice
- 500-gram boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 onion, chopped
- 1 cup pineapple chunks
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- Salt and pepper, to taste
How to Make Garlic and Egg Fried Rice
- In a bowl, coat the chicken pieces with 1/2 cup cornstarch and season with salt and pepper.
- Dip each chicken piece in the beaten egg, shaking off any excess, and set aside.
- In a large skillet or wok, heat the vegetable oil over high heat. Add the chicken and cook until golden brown and crispy, about 3-4 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add the chopped bell peppers and onion and sauté for 2-3 minutes until tender.
- Add the pineapple chunks, ketchup, rice vinegar, brown sugar, soy sauce, and cornstarch mixture to the skillet, stirring constantly until the sauce thickens and the pineapple is heated through.
- Return the cooked chicken to the skillet and stir to coat in the sauce.
