Ingredients of Garlic and Egg Fried Rice

  • 500-gram boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1 cup pineapple chunks
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper, to taste

How to Make Garlic and Egg Fried Rice

  1. In a bowl, coat the chicken pieces with 1/2 cup cornstarch and season with salt and pepper.
  2. Dip each chicken piece in the beaten egg, shaking off any excess, and set aside.
  3. In a large skillet or wok, heat the vegetable oil over high heat. Add the chicken and cook until golden brown and crispy, about 3-4 minutes per side. Remove chicken from skillet and set aside.
  4. In the same skillet, add the chopped bell peppers and onion and sauté for 2-3 minutes until tender.
  5. Add the pineapple chunks, ketchup, rice vinegar, brown sugar, soy sauce, and cornstarch mixture to the skillet, stirring constantly until the sauce thickens and the pineapple is heated through.
  6. Return the cooked chicken to the skillet and stir to coat in the sauce.
  7. Serve hot over rice or noodles. Enjoy!
