Ingredients of Sticky Toffee Pudding
- 1 1/2 cups chopped dates
- 1 1/2 cups boiling water
- 1 tsp bicarbonate of soda
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup light brown sugar
- 2 eggs
- 1 3/4 cups self-raising flour
- 1 tsp vanilla extract
- For the toffee sauce:
- 1/2 cup unsalted butter
- 1 cup light brown sugar
- 1 cup heavy cream
How to Make Sticky Toffee Pudding
- Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) square baking dish.
- Place the chopped dates in a bowl, pour the boiling water over them, and sprinkle with bicarbonate of soda. Set aside.
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs, one at a time.
- Fold in the flour and vanilla extract, then stir in the date mixture until well combined.
- Pour the batter into the prepared dish and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- While the pudding is baking, make the toffee sauce. In a saucepan, melt the butter and sugar together over medium heat.
- Once the sugar has dissolved, add the heavy cream and stir well. Bring the mixture to a boil, then reduce the heat and simmer for 5-10 minutes, stirring constantly, until the sauce has thickened.
- Once the pudding is done, remove it from the oven and let it cool for a few minutes.
- Pour the toffee sauce over the pudding and serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
Enjoy your delicious sticky toffee pudding!
