Ingredients of Spinach Filo Pastry

  • 1 packet of frozen filo pastry sheets
  • 500g of fresh spinach
  • 200g of feta cheese
  • 1 onion
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

How to Make Spinach Filo Pastry

  1. Preheat the oven to 180°C.
  2. In a large pan, heat the olive oil over medium heat. Add the finely chopped onion and garlic and cook until they are soft and fragrant.
  3. Add the spinach to the pan and cook until it wilts down. Remove the pan from the heat and let it cool down a bit.
  4. Once the spinach mixture is cool, add the crumbled feta cheese, salt and pepper and mix everything well.
  5. Take the filo pastry sheets out of the freezer and let them thaw for about 10-15 minutes.
  6. Place a sheet of filo pastry on a flat surface and brush it with olive oil. Add another sheet of pastry on top and brush it with olive oil again. Repeat this process until you have used up all the filo sheets.
  7. Spoon the spinach and feta mixture onto the filo pastry, leaving a border around the edges.
  8. Fold the edges of the filo pastry up and over the spinach mixture, pressing the edges down lightly.
  9. Brush the top of the pastry with a little more olive oil.
  10. Place the spinach filo pastry on a baking sheet and bake in the preheated oven for 25-30 minutes, or until it is golden brown and crispy.
  11. Remove the spinach filo pastry from the oven and let it cool for a few minutes before cutting it into slices.
  12. Serve the spinach filo pastry hot or at room temperature, garnished with fresh herbs or a squeeze of lemon juice, if desired.
