Ingredients of Spanish Potatoes

  • 4 medium potatoes
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper

For the salsa brava:

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp chilli powder
  • Salt and black pepper, to taste

For the aioli:

  • 1/4 cup mayonnaise
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • Salt and black pepper, to taste

How to Make Spanish Potatoes

  1. Peel the potatoes and cut them into bite-sized cubes. Rinse with cold water and pat dry with a paper towel.
  2. Heat the olive oil in a large frying pan over medium-high heat. Add the potatoes and sprinkle with salt, smoked paprika, and cayenne pepper. Fry for about 10-12 minutes or until golden brown and crispy. Use a slotted spoon to remove the potatoes from the pan and transfer them to a plate lined with paper towels to drain the excess oil.
  3. To make the salsa brava, heat 1 tbsp of olive oil in a medium saucepan over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes or until soft. Add the crushed tomatoes, smoked paprika, cumin, chilli powder, salt, and black pepper. Bring to a simmer and cook for about 5-7 minutes, stirring occasionally. Remove from heat and let cool for a few minutes.
  4. Using a blender or food processor, puree the tomato mixture until smooth. Strain through a fine-mesh sieve into a bowl and discard any solids.
  5. To make the aioli, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper in a small bowl. Whisk until smooth.
  6. To serve, spoon the salsa brava over the fried potatoes and drizzle with the aioli. Garnish with chopped parsley or chives if desired.
