Spanish potatoes, or “patatas bravas” in Spanish, are a popular tapa dish in Spain. They are crispy fried potatoes that are typically served with a spicy tomato sauce, known as “salsa brava,” and often accompanied by aioli or garlic mayonnaise.

Ingredients of Spanish Potatoes
- 4 medium potatoes
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
For the salsa brava:
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp chilli powder
- Salt and black pepper, to taste
For the aioli:
- 1/4 cup mayonnaise
- 1 garlic clove, minced
- 1 tsp lemon juice
- Salt and black pepper, to taste
How to Make Spanish Potatoes
- Peel the potatoes and cut them into bite-sized cubes. Rinse with cold water and pat dry with a paper towel.
- Heat the olive oil in a large frying pan over medium-high heat. Add the potatoes and sprinkle with salt, smoked paprika, and cayenne pepper. Fry for about 10-12 minutes or until golden brown and crispy. Use a slotted spoon to remove the potatoes from the pan and transfer them to a plate lined with paper towels to drain the excess oil.
- To make the salsa brava, heat 1 tbsp of olive oil in a medium saucepan over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes or until soft. Add the crushed tomatoes, smoked paprika, cumin, chilli powder, salt, and black pepper. Bring to a simmer and cook for about 5-7 minutes, stirring occasionally. Remove from heat and let cool for a few minutes.
- Using a blender or food processor, puree the tomato mixture until smooth. Strain through a fine-mesh sieve into a bowl and discard any solids.
- To make the aioli, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper in a small bowl. Whisk until smooth.
- To serve, spoon the salsa brava over the fried potatoes and drizzle with the aioli. Garnish with chopped parsley or chives if desired.
