Ingredients of Seafood Risotto
- 500 gram. mixed seafood (shrimp, scallops, mussels, etc.)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups Arborio rice
- 1/2 cup white wine
- 6 cups chicken or seafood broth
- 1/4 cup Parmesan cheese, grated
- 2 tbsp. butter
- 2 tbsp. olive oil
- Salt and pepper, to taste
How to Make Seafood Risotto
- Heat the broth in a saucepan and keep it on low heat.
- In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the Arborio rice to the pan and stir until the grains are coated with the oil and become translucent.
- Pour the white wine into the pan and stir until the wine is absorbed by the rice.
- Begin adding the broth to the rice one ladle at a time, stirring constantly until each ladle of broth is absorbed before adding the next. Continue doing this until the rice is cooked through but still slightly firm.
