Ingredients of Seafood Risotto

  • 500 gram. mixed seafood (shrimp, scallops, mussels, etc.)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups Arborio rice
  • 1/2 cup white wine
  • 6 cups chicken or seafood broth
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • Salt and pepper, to taste

How to Make Seafood Risotto

  1. Heat the broth in a saucepan and keep it on low heat.
  2. In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  3. Add the Arborio rice to the pan and stir until the grains are coated with the oil and become translucent.
  4. Pour the white wine into the pan and stir until the wine is absorbed by the rice.
  5. Begin adding the broth to the rice one ladle at a time, stirring constantly until each ladle of broth is absorbed before adding the next. Continue doing this until the rice is cooked through but still slightly firm.
  6. While the rice is cooking, cook the seafood in a separate pan until cooked through. Season with salt and pepper to taste.
  7. Once the rice is cooked, add the cooked seafood to the pan with the rice and stir.
  8. Add the Parmesan cheese and butter to the pan and stir until they are melted and well incorporated.
  9. Taste and adjust the seasoning if needed. Serve hot.
