Samak ki khichdi is a traditional Indian dish made with samak rice, which is also known as barnyard millet. It is a popular dish during the Hindu fasting period of Navratri and is also consumed by those who are looking for a gluten-free and healthy meal option.
Ingredients of Samak Ki Khichdi
- 1 cup samak rice
- 1/4 cup split yellow moong dal (optional)
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon grated ginger
- 1 green chilli, finely chopped (optional)
- 1/4 teaspoon asafoetida (hing)
- 1/2 teaspoon turmeric powder
- Salt to taste
- 3 cups water
How to Make Samak Ki Khichdi
- Rinse the Samak rice and moong dal (if using) together in a fine-mesh strainer until the water runs clear. Soak them in enough water for 30 minutes.
- Heat ghee or oil in a pressure cooker or a heavy-bottomed pan. Add cumin seeds and let them crackle.
- Add grated ginger and green chilli (if using) and sauté for a few seconds.
- Add asafoetida and turmeric powder and stir well.
- Drain the water from the soaked rice and dal and add them to the cooker or pan.
- Add 3 cups of water and salt to taste. Mix well.
- Close the pressure cooker lid and cook for 3-4 whistles on medium heat. If using a pan, cover it and cook on low heat for 20-25 minutes or until the rice and dal are cooked.
- Once the pressure has been released, open the lid and fluff the khichdi with a fork.
- Serve hot with plain yoghurt or cucumber raita.
