Ingredients of Samak Ki Khichdi

  • 1 cup samak rice
  • 1/4 cup split yellow moong dal (optional)
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1 green chilli, finely chopped (optional)
  • 1/4 teaspoon asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 3 cups water

How to Make Samak Ki Khichdi

  1. Rinse the Samak rice and moong dal (if using) together in a fine-mesh strainer until the water runs clear. Soak them in enough water for 30 minutes.
  2. Heat ghee or oil in a pressure cooker or a heavy-bottomed pan. Add cumin seeds and let them crackle.
  3. Add grated ginger and green chilli (if using) and sauté for a few seconds.
  4. Add asafoetida and turmeric powder and stir well.
  5. Drain the water from the soaked rice and dal and add them to the cooker or pan.
  6. Add 3 cups of water and salt to taste. Mix well.
  7. Close the pressure cooker lid and cook for 3-4 whistles on medium heat. If using a pan, cover it and cook on low heat for 20-25 minutes or until the rice and dal are cooked.
  8. Once the pressure has been released, open the lid and fluff the khichdi with a fork.
  9. Serve hot with plain yoghurt or cucumber raita.
