Ingredients of Saewoo Bokumbop (Shrimp Fried Rice)
- 2 cups of cooked white rice
- 1/2 lb of shrimp, peeled and deveined
- 1/2 cup of carrots, diced
- 1/2 cup of green onions, chopped
- 1/2 cup of frozen peas
- 2 garlic cloves, minced
- 2 eggs
- 1 tablespoon of vegetable oil
- 1 tablespoon of soy sauce
- Salt and pepper, to taste
How to Make Saewoo Bokumbop (Shrimp Fried Rice)
- Heat a wok or large skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan.
- Add the garlic and sauté until fragrant, about 30 seconds.
- Add the shrimp and stir-fry until pink and cooked through about 3-4 minutes. Remove from the wok and set aside.
- Add the carrots to the wok and stir-fry for 2-3 minutes until slightly softened.
- Add the green onions and frozen peas and stir-fry for an additional 1-2 minutes.
- Push the vegetables to the sides of the wok and add the eggs to the centre. Scramble the eggs until cooked through.
- Add the cooked rice to the wok and stir-fry to combine with the vegetables and eggs.
- Add the soy sauce, salt, and pepper to taste. Stir-fry for an additional 2-3 minutes to allow the flavours to meld together.
- Return the cooked shrimp to the wok and stir-fry for an additional 1-2 minutes to heat through.
