Ingredients of Saewoo Bokumbop (Shrimp Fried Rice)

  • 2 cups of cooked white rice
  • 1/2 lb of shrimp, peeled and deveined
  • 1/2 cup of carrots, diced
  • 1/2 cup of green onions, chopped
  • 1/2 cup of frozen peas
  • 2 garlic cloves, minced
  • 2 eggs
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of soy sauce
  • Salt and pepper, to taste

How to Make Saewoo Bokumbop (Shrimp Fried Rice)

  1. Heat a wok or large skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan.
  2. Add the garlic and sauté until fragrant, about 30 seconds.
  3. Add the shrimp and stir-fry until pink and cooked through about 3-4 minutes. Remove from the wok and set aside.
  4. Add the carrots to the wok and stir-fry for 2-3 minutes until slightly softened.
  5. Add the green onions and frozen peas and stir-fry for an additional 1-2 minutes.
  6. Push the vegetables to the sides of the wok and add the eggs to the centre. Scramble the eggs until cooked through.
  7. Add the cooked rice to the wok and stir-fry to combine with the vegetables and eggs.
  8. Add the soy sauce, salt, and pepper to taste. Stir-fry for an additional 2-3 minutes to allow the flavours to meld together.
  9. Return the cooked shrimp to the wok and stir-fry for an additional 1-2 minutes to heat through.
  10. Serve hot and enjoy your delicious Saewoo Bokumbop!
