- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped

- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 sheet puff pastry
How to Make Sweet Potato Pie
- Preheat the oven to 200°C (400°F).
- Heat the butter and olive oil in a pan over medium-high heat. Add the onion, garlic, carrot, and celery, and sauté until the vegetables are tender.
- Add the prawns to the pan and sauté for a few minutes until they turn pink.
- Add the flour to the pan and stir until the vegetables and prawns are coated.
- Pour in the milk, cream, and broth and stir until the sauce thickens. Season with salt and pepper.
- Pour the prawn mixture into a pie dish.
- Roll out the puff pastry and lay it over the top of the pie dish. Trim the edges and press them down onto the dish to seal.
- Cut a few small slits in the top of the pastry to allow steam to escape.
- Bake for 25-30 minutes, or until the pastry is golden brown and puffed up.
- Serve the prawn pie hot, garnished with chopped parsley if desired.
