Ingredients of Mexican Quinoa Salad
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1/2 cup corn kernels
- 1 jalapeno pepper, seeded and minced
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1/4 cup lime juice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chilli powder
- Salt and pepper, to taste
How to Make Mexican Quinoa Salad
- Rinse quinoa under cold running water and drain well.
- In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, reduce heat to low, and simmer for 15-20 minutes, or until quinoa is tender and the water is absorbed. Fluff with a fork and set aside to cool.
