Ingredients of Mexican Quinoa Salad

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1/2 cup corn kernels
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chilli powder
  • Salt and pepper, to taste

How to Make Mexican Quinoa Salad

  1. Rinse quinoa under cold running water and drain well.
  2. In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, reduce heat to low, and simmer for 15-20 minutes, or until quinoa is tender and the water is absorbed. Fluff with a fork and set aside to cool.
  3. In a large mixing bowl, combine the cooked quinoa, black beans, red and yellow bell peppers, red onion, corn, jalapeno, and cilantro.
  4. In a small mixing bowl, whisk together the lime juice, olive oil, garlic, cumin, chilli powder, salt, and pepper.
  5. Pour the dressing over the quinoa salad and toss to combine.
  6. Gently stir in the diced avocado.
  7. Serve the salad chilled or at room temperature.
