Ingredients of Veg Fried Rice
- 4-5 medium-sized potatoes
- 2 tbsp cornstarch
- 1/4 tsp salt
- Oil for deep frying
- 2 tbsp oil
- 1 tbsp finely chopped garlic
- 1 tbsp finely chopped ginger
- 2-3 dried red chillies, broken into pieces
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1/4 tsp black pepper powder
- Salt to taste
- Chopped spring onions for garnish
How to Make Veg Fried Rice
- Peel and cut the potatoes into thin, long strips. Soak them in cold water for 30 minutes to remove excess starch.
- Drain the water and pat the potato strips dry with a paper towel. Add cornstarch and salt and mix well.
- Heat oil in a wok or deep pan. Once the oil is hot, add the potato strips in batches and fry until golden and crispy. Drain on a paper towel and keep aside.
- Heat 2 tbsp oil in a pan. Add garlic, ginger and dried red chillies and sauté for a minute.
- Add honey, soy sauce, vinegar, black pepper powder, and salt. Mix well and cook for a minute or two until the sauce thickens slightly.
- Add the fried potatoes to the sauce and toss well to coat. Cook for a minute or two until the potatoes are well coated and the sauce thickens further.
- Garnish with chopped spring onions and serve hot.
