Ingredients of Veg Fried Rice

  • 4-5 medium-sized potatoes
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • Oil for deep frying
  • 2 tbsp oil
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 2-3 dried red chillies, broken into pieces
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1/4 tsp black pepper powder
  • Salt to taste
  • Chopped spring onions for garnish

How to Make Veg Fried Rice

  1. Peel and cut the potatoes into thin, long strips. Soak them in cold water for 30 minutes to remove excess starch.
  2. Drain the water and pat the potato strips dry with a paper towel. Add cornstarch and salt and mix well.
  3. Heat oil in a wok or deep pan. Once the oil is hot, add the potato strips in batches and fry until golden and crispy. Drain on a paper towel and keep aside.
  4. Heat 2 tbsp oil in a pan. Add garlic, ginger and dried red chillies and sauté for a minute.
  5. Add honey, soy sauce, vinegar, black pepper powder, and salt. Mix well and cook for a minute or two until the sauce thickens slightly.
  6. Add the fried potatoes to the sauce and toss well to coat. Cook for a minute or two until the potatoes are well coated and the sauce thickens further.
  7. Garnish with chopped spring onions and serve hot.
