Foxtail millet pulao is a delicious and healthy Indian rice dish made using foxtail millet, vegetables, and aromatic spices. Here’s a simple recipe to make foxtail millet pulao:

Ingredients of Foxtail Millet Pulao

  • 1 cup foxtail millet
  • 1 onion, sliced
  • 1 tomato, chopped
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 2 green chillies, slit
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2-3 cloves
  • 1 cinnamon stick
  • 2 cardamom pods
  • 2 cups water
  • Salt to taste
  • 2 tbsp oil

How to Make Foxtail Millet Pulao

  1. Rinse the foxtail millet thoroughly in water and soak it for 30 minutes. Drain the water and keep the millet aside.
  2. Heat oil in a pressure cooker and add the cumin seeds, bay leaf, cloves, cinnamon stick, and cardamom pods. Sauté for a few seconds until fragrant.
  3. Add the sliced onions and green chillies and sauté until the onions turn translucent.
  4. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Add the chopped tomatoes and sauté until they turn mushy.
  6. Add the mixed vegetables and sauté for a few minutes until they are slightly cooked.
  7. Add the drained foxtail millet and sauté for a minute until the millet is coated with the masala.
  8. Add 2 cups of water and salt to taste. Mix well and pressure cook for 2 whistles.
  9. Once the pressure is released, open the lid and fluff the pulao with a fork.
  10. Serve hot with a raita or any side dish of your choice.
