  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup cold water
  • Vegetable oil, for frying

  • 1 large jalapeno pepper, seeded and minced
  • 1/2 medium red onion, chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

How to Make Crispy Shrimp Tempura with Jalapeno and Onion Salsa

  1. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and salt.
  2. In a separate bowl, beat the egg and cold water together until combined.
  3. Add the egg mixture to the flour mixture and stir until just combined. Do not overmix. The batter should be lumpy.
  4. Heat the vegetable oil in a deep-fryer or heavy-bottomed pot to 350°F.
  5. Dip each shrimp into the batter, coating well, and then carefully drop it into the hot oil. Fry the shrimp in small batches, about 4-5 at a time, until golden brown, about 2-3 minutes.
