Ingredients of Chicken Paella 

  • 500 grams of chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon saffron threads
  • 1 can diced tomatoes, drained
  • 2 cups short-grain rice
  • 1/2 cup frozen peas
  • Salt and pepper, to taste
  • Lemon wedges, for serving

How to Make Chicken Paella

  1. Heat the olive oil in a large paella pan over medium heat.
  2. Add the chicken and cook until browned on all sides. Remove from the pan and set aside.
  3. Add the onion, red bell pepper, and green bell pepper to the pan and cook until softened, about 5 minutes.
  4. Add the garlic and cook for an additional minute.
  5. In a separate pot, bring the chicken broth to a simmer and add the saffron threads.
  6. Add the diced tomatoes to the pan with the vegetables and cook for 2-3 minutes.
  7. Add the rice to the pan and stir to combine with the vegetables.
  8. Pour the saffron-infused chicken broth over the rice and vegetables and stir to combine.
  9. Add the cooked chicken back to the pan and stir to combine.
  10. Bring the mixture to a boil, then reduce the heat to low and let simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  11. Add the frozen peas to the pan during the last 5 minutes of cooking.
  12. Season with salt and pepper to taste.
  13. Serve with lemon wedges on the side.
