  • 1 kilogram boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pita bread
  • Tomatoes, chopped
  • Red onion, sliced
  • Tzatziki sauce (made with Greek yoghurt, cucumber, garlic, and dill)

How to Make Chicken Gyro

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper. Add chicken thighs and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  3. Remove the chicken from the marinade and discard the remaining marinade. Thread the chicken onto skewers and place on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and lightly browned.
  5. To assemble the gyro, place warm pita bread on a plate. Top with the sliced chicken, chopped tomatoes, sliced red onion, and a dollop of tzatziki sauce.
  6. Fold the pita bread around the chicken and toppings, and serve immediately. Enjoy your delicious chicken gyro!
