Ingredients of Cantonese Chicken Soup

  • 1 whole chicken
  • 1 large onion, sliced
  • 1-2 inches of ginger, sliced
  • 2-3 cloves of garlic, smashed
  • 2-3 dried shiitake mushrooms, soaked and sliced
  • 1 large carrot, sliced
  • 1 stalk of celery, sliced
  • 1-2 tablespoons of soy sauce
  • Salt and pepper to taste
  • Water

How to Make Cantonese Chicken Soup

  1. Clean the chicken and remove any giblets or excess fat. Place the chicken in a large pot and add enough water to cover the chicken.
  2. Add the onion, ginger, garlic, and dried shiitake mushrooms to the pot. Bring the water to a boil and reduce the heat to low. Let the soup simmer for at least 1-2 hours, or until the chicken is cooked through and tender.
  3. Use a slotted spoon to remove the chicken from the pot and set it aside to cool. Strain the soup through a fine-mesh strainer to remove any solids.
  4. Return the strained soup to the pot and add the sliced carrots and celery. Bring the soup back to a simmer and cook until the vegetables are tender about 10-15 minutes.
  5. Shred the chicken meat into bite-sized pieces and add it back to the soup. Season with soy sauce, salt, and pepper to taste.
