Ingredients of Ca Cang Kho

  • 1 lb catfish fillets, cut into small pieces
  • 1/4 cup sugar
  • 1/4 cup fish sauce
  • 1/4 cup water
  • 1 shallot, sliced
  • 3 garlic cloves, minced
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • Green onions, chopped (optional)

How to Make Ca Cang Kho

  1. In a small bowl, mix together the sugar, fish sauce, water, and black pepper. Set aside.
  2. Heat the oil in a large pan over medium heat. Add the shallots and garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the catfish to the pan and cook until browned on both sides, about 3-4 minutes per side.
  4. Pour the sugar mixture over the catfish and stir to combine.
  5. Bring the mixture to a simmer and reduce the heat to low. Cook, stirring occasionally, until the sauce has thickened and the catfish is caramelized and fully cooked, about 15-20 minutes.
  6. Serve hot with rice and garnish with chopped green onions, if desired.
