Ingredients of Brioche Pizza

For the brioche dough:

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water
  • 1/4 cup sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 4 eggs
  • 1/2 cup unsalted butter, at room temperature

For the toppings:

  • 1/2 cup tomato sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup sliced cherry tomatoes
  • 1/4 cup sliced prosciutto
  • 1/4 cup arugula

How to Make Brioche Pizza

  1. In a small bowl, dissolve the yeast in the warm water and let sit for 5 minutes until foamy.
  2. In the bowl of a stand mixer fitted with a dough hook, combine the sugar, flour, and salt.
  3. Add the eggs and yeast mixture to the dry ingredients and mix until the dough starts to come together.
  4. Add the butter, one tablespoon at a time, and continue to mix until the dough is smooth and elastic, about 10 minutes.
  5. Transfer the dough to a greased bowl, cover with plastic wrap, and let rise in a warm place for 1-2 hours, or until doubled in size.
  6. Preheat the oven to 425°F (218°C).
  7. Punch down the dough and divide it into two equal portions. Roll each portion into a round shape and place them on a baking sheet.
  8. Spread the tomato sauce over the top of each pizza and sprinkle with shredded mozzarella cheese.
  9. Add the sliced cherry tomatoes and prosciutto on top of the cheese.
  10. Bake the pizzas in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  11. Remove from the oven and top with fresh arugula.
  12. Slice and serve immediately.
