Ingredients of Banana Appam

  • 1 cup rice flour
  • 1 ripe banana, mashed
  • 1/2 cup grated coconut
  • 1/4 cup jaggery or brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cardamom powder
  • A pinch of salt
  • Oil or ghee for frying

How to Make Banana Appam

  1. In a mixing bowl, add the rice flour, mashed banana, grated coconut, jaggery, baking powder, cardamom powder, and salt. Mix well.
  2. Add enough water to make a thick batter. The batter should be of dropping consistency.
  3. Cover the bowl with a lid or a clean cloth and keep it aside for 4-6 hours or overnight to ferment.
  4. Heat a non-stick appam pan or a regular frying pan over medium heat. Add a few drops of oil or ghee and swirl the pan to coat it evenly.
  5. Pour a spoonful of batter into the pan and swirl it around to spread it evenly.
  6. Cover the pan with a lid and cook for 2-3 minutes or until the edges start to turn golden brown.
  7. Flip the appam using a spatula and cook for another 1-2 minutes or until it is cooked through.
  8. Remove the appam from the pan and place it on a plate.
  9. Repeat the process with the remaining batter, adding more oil or ghee as needed.
  10. Serve the Banana Appam hot with coconut chutney or any other dipping sauce of your choice.
