How to Make Apple Pie with Raisin Relish
- Preheat your oven to 375°F (190°C).
- To make the raisin relish, add all the ingredients to a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and let it simmer for 10-12 minutes, or until the raisins are plump and the mixture has thickened. Remove from heat and set aside.
- In a large bowl, mix the sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and ginger until well combined.
- Place one of the pie crusts in a 9-inch pie dish, pressing it into the bottom and up the sides. Trim any excess dough.
- Pour the apple mixture into the pie crust and dot with small pieces of butter.
- Roll out the second pie crust and cut it into strips to make a lattice pattern on top of the pie. You can also use cookie cutters to make fun shapes to place on top.
- Brush the top of the pie crust with the beaten egg and sprinkle coarse sugar on top.
- Place the pie in the oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- Let the pie cool for at least 20 minutes before serving. Serve with a dollop of whipped cream and a spoonful of raisin relish on top. Enjoy!
