  • 4 ripe tomatoes
  • 2 medium-sized onions, chopped
  • 3-4 green chillies, chopped
  • 2-3 garlic cloves, minced
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Curry leaves
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon tamarind paste
  • 1 tablespoon jaggery or sugar (optional)
  • Water, as needed
  • Fresh coriander leaves, for garnish

How to Make Andhra-Style Tomato Chutney

  1. Heat oil in a pan or skillet over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds until fragrant.
  2. Add chopped onions and green chillies to the pan. Sauté until the onions become translucent and slightly browned.
  3. Now, add minced garlic and sauté for a minute until the raw smell disappears.
  4. Chop the tomatoes into small pieces and add them to the pan. Stir well and cook for about 5-7 minutes until the tomatoes become soft and mushy.
  5. Add turmeric powder and salt to taste. Mix well.
  6. Add tamarind paste and jaggery or sugar (if using) to balance the flavours. Mix everything together.
  7. Reduce the heat to low and let the chutney simmer for about 10-15 minutes. If the mixture becomes too thick, you can add a little water to adjust the consistency.
  8. Remove the pan from heat and allow the chutney to cool down.
  9. Once cooled, transfer the chutney to a blender or food processor. Blend it to a smooth or slightly chunky consistency, depending on your preference.
  10. Taste the chutney and adjust the seasoning if needed.
  11. Garnish with fresh coriander leaves.
