Ingredients of Banana Appam
- 1 cup rice flour
- 1 ripe banana, mashed
- 1/2 cup grated coconut
- 1/4 cup jaggery or brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon cardamom powder
- A pinch of salt
- Oil or ghee for frying
How to Make Banana Appam
- In a mixing bowl, add the rice flour, mashed banana, grated coconut, jaggery, baking powder, cardamom powder, and salt. Mix well.
- Add enough water to make a thick batter. The batter should be of dropping consistency.
- Cover the bowl with a lid or a clean cloth and keep it aside for 4-6 hours or overnight to ferment.
- Heat a non-stick appam pan or a regular frying pan over medium heat. Add a few drops of oil or ghee and swirl the pan to coat it evenly.
- Pour a spoonful of batter into the pan and swirl it around to spread it evenly.
- Cover the pan with a lid and cook for 2-3 minutes or until the edges start to turn golden brown.
- Flip the appam using a spatula and cook for another 1-2 minutes or until it is cooked through.
- Remove the appam from the pan and place it on a plate.
- Repeat the process with the remaining batter, adding more oil or ghee as needed.
- Serve the Banana Appam hot with coconut chutney or any other dipping sauce of your choice.
