  • 2 pears
  • 4 cups mixed salad greens
  • 1/2 cup walnuts
  • 1/4 cup crumbled blue cheese
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

How to Make Poached Pear Salad

  1. Peel the pears and cut them in half lengthwise. Remove the core and seeds with a spoon.
  2. In a medium saucepan, combine enough water to cover the pears, 1/4 cup of honey and 2 tablespoons of lemon juice. Bring the mixture to a boil.
  3. Reduce the heat to low and add the pear halves to the saucepan. Simmer for 10-15 minutes, or until the pears are tender.
  4. Remove the pears from the saucepan and let them cool.
