- 1 1/2 cups vegetable oil
- 3 large eggs

- Cream cheese frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar

- 2 tablespoons heavy cream
How to Make All American Carrot Cake
- Preheat the oven to 350 degrees F. Grease and flour two 9-inch cake pans or line with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract until smooth.
- Gradually whisk in the dry ingredients until just combined.
- Fold in the grated carrots, pecans or walnuts, and coconut (if using).
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
