1 cup of barley 2 carrots, chopped 2 celery stalks, chopped 1 onion, chopped 2 cloves of garlic, minced 6 cups of chicken or vegetable broth 1 teaspoon of dried thyme Salt and pepper to taste Olive oil
Cook Time: 45 Min
Ingredients
In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes, or until the onion is soft and translucent.
Add the chopped carrots and celery and continue to saute for an additional 2-3
Add the barley to the pot and stir to combine with the vegetables.
Pour in the chicken or vegetable broth and add the dried thyme. Bring the soup to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the barley is tender.
Season with salt and pepper to taste.
